Growing up in the city of Ires had advantages – like seafood! A huge foodie, Shayla is fond of feasting on the bounty of the sea and the local freshwater lakes and rivers. One of her favorites is the walleye.
Shayla’s Crispy Baked Walleye
- 1 Med. or large walleye fillet
- 1 cup bread crumbs or panko flakes
- 1/2 cup grated Parmesan cheese
- 1 tsp. parsley, dill or herb of your choice
- 1 cup heavy whipping cream
Oil or butter a baking tray and preheat oven to 450 F.
Mix the bread crumbs, Parmesan cheese and herb(s) in a bowl.
Rinse the fillet in cold water, pat dry. Dip the fillet into the cream and then set it scale side down on the baking tray. Press half the breadcrumb mix onto the fillet. Sprinkle with enough of the heavy cream to wet the breadcrumb covering. Then, press the remaining half of the bread crumb mix onto the fillet.
Bake uncovered for 15 – 20 minutes or until the fish flakes easily.
