As comfort foods go, Bailey says that shrimp is her favorite. And when you see bloody ghosts all the time, you need all the comfort you can get! To keep herself healthy Bailey makes her shrimp salad as often as she can.
- 5 oz. mixed greens, Bailey prefers a mix of baby spinach, kale and beet greens
- 1/2 lb. cooked shrimp, cleaned, rinsed and slightly chilled
- 1/4 cup walnut pieces
- 1-2 tomatoes, sliced
- 1 cucumber, sliced
- 1/2 cup mozzarella cheese, shredded
- olive oil
- Raspberry or pomegranate vinegar
Mix the greens well in a serving bowl. Top greens with the shrimp, walnuts and remaining vegetables. Sprinkle the cheese over the top and serve with olive oil and vinegar for a dressing.
